Tunafish Cakes with slow roasted tomato salad

)

My first stab at these 'tunafish cakes' which were inspired because I had the Elvis song 'Thanks to the Rolling Sea' going round in my head all day. Turned out really nice and the tomatoes (cooked in a 80 degree oven for two hours) were incredibly sweet.

Tuna (Mauritius)
Egg (UK)
Onion (home grown)
Tomato (UK)
