Special Guest Star Christmas
After copious amounts of wine and Brie and Cranberry sandwhiches our friends' Christmas Eve party I inadvertently left our camera round at their house. Thankfully Emma and Matthew kindly agreed to photograph their Christmas lunch for a festive guest slot HMT (which I'm very pleased about as Emma is a fantastic cook). This looks like a very lovely nut and mushroom roast with a leek sauce and all the trimmings. Bostin' Steve Austin as Pop Will Eat Itself used to say.

It's actually a Parsnip, Cashew and Mushroom loaf. We're having the rest with roasties for our tea tonight.
Here's the recipe if anyone's interested - afraid I can't cite the provenance of ingredients for your blog:
Layered cashew and mushroom roast (serves 6-8)
Ingedients
1 tbsp oil
1 small onion, chopped
2 cloves garlic, crushed
8oz cashew nuts, ground
4oz breadcrumbs
1 egg, beaten
3 medium parsnips, cooked and mashed
½ tsp dried rosemary
½ tsp dried thyme
1 tsp yeast extract
¼ pint vegetable stock
Salt and pepper
1oz butter or marg
8oz mushrooms, sliced
Method
·Pre-heat oven to GM 4 / 350F / 180C
·Grease and line a 2lb loaf tin.
·Fry garlic and onion in oil until soft.
·Mix breadcrumbs with cashew nuts then add beaten egg.
·Mix in mashed parsnips and herbs then add fried onion and garlic with juices.
·Dissolve yeast extract in vegetable stock and add to mixture.
·Season mixture to taste.
·Saute the mushrooms in butter / marg.
·Press in half the mixture, cover with the mushrooms and then top with the rest of the mixture.
·Cover with foil and bake for one hour.
·Remove from oven and leave to stand for 10 minutes before turning out.
·Can be eaten hot or cold and is nice in sandwiches on boxing day!
